Quinoa

Quinoa (pronounced Keen-wah)
If you haven't discovered it already then it is not too late to jump on the bandwagon. Quinoa is a low GI, gluten free, healthy, nutritious, delicious alternative to rice, pasta and potatoes.
It is grown in Peru and is actually the seeds of the Goosefoot plant.
55.3% carbohydrates, 13.1% protein, 5.8% fat, 13.6% fiber, 9.3% water, and 2.9% minerals

Cooking tips

To cook, bring one part quinoa and two parts liquid to a boil; cover and reduce to a simmer for about 15 minutes or until the grains are translucent. You can also use a rice cooker to prepare quinoa. Some people cook and eat quinoa as they would oatmeal. As a breakfast food, combine the quinoa with honey, nuts or berries.

Today's Vitamin Tips/Dagens vitamin tips!

Many misinformed meat eaters believe that they will die a terrible death if they stop eating meat. They believe that they can only get essential B vitamins, specifically B12, from meat. Wrong!! It is true that B12 is quite rare in vegetables, but you can find it in quinoa, algae and bean sprouts. Tasty and nutritious! OK algae is probably not so appetizing for most of us, but in many sushi bars you can order an algae sallad with sesame oil, sesame seeds and chili. Delicious! It tastes and looks rather like glass noodles - try it!

Coffee Time

A soya capuccino with double espresso shot is just what the doctor ordered. My favourite place and one where the coffee is produced to perfection is Lilla kaffe rosteriet on baltzergatan.

Other recommended vegan coffee shops are:
Nesta - oat milk
Njutbar - oat milk
Solde - soya
Melvins - soya

Anyone else have any favourites?

Govindas

If you haven't been there yet make your way to Govindas on brogatan in Malmö, situated in the old miso vegokök. Lunch menu everyday including soup, sallad and main course.
Inspirational healthy food that never fails to impress - I think I am addicted!
Always vegan alternatives. Heavenly!!!!
If you have tried Govindas in Malmö please post a comment to let me know what you think!
